6 cod fish fillets, approximately 120g each

1/3 cup of chopped red bell pepper
1/3 cup of diced tomato, skin and seeds removed
2 tablespoons of olive oil
1 tablespoon of chopped fresh dill or coriander

Season the fish fillets with salt and pepper
Mix well the remaining ingredients and season with salt
Place each fillet on a square of aluminum foil, approximately 24 x 30 cm
Top each fillet with the prepared mixture
Fold the paper to form a package, without pressing the fish
Bake in a moderate oven (180°C), preheated, for about 20 minutes or until the fish is cooked
Serve the fish packages
