6 fish filets from the catch of the day
3 red bell peppers, sliced into strips, fresh or preserved
2 tablespoons of sweet basil
olive oil
salt and black pepper to taste
Rinse the filets well and dry them thoroughly with paper towels
Next, cut 6 aluminum foil rectangles
Gently brush them with olive oil
Place the filets in each rectangle
Sprinkle with sweet basil and season with salt and black pepper
Place 2 pepper strips in the shape of a cross on top of each filet
Fold the aluminum foil tightly and place in the oven
Heat the oven to hot temperature (200°C) and bake for approximately 15-20 minutes
Serve in 6 portions
You can, if you wish, modify this recipe by substituting sweet basil with other seasonings
A good suggestion is to use capers
Due to their strong flavor, chop the capers before placing them on the filets
Use one or two capers per filet, according to your preference
Another simple but flavorful idea is to season the fish by substituting sweet basil with garlic and onion.
