2 cups of water
2 tablespoons of lemon juice
7 spinach leaves
1 1/2 cup of leftover linguiça, finely chopped
1/2 cup of chopped onion
1/4 cup of red pepper flakes
1/3 cup of shredded mozzarella cheese
2 tablespoons of all-purpose flour

Combine the water and lemon juice in a microwave-safe bowl and heat in the microwave on high for 5 minutes
Add the spinach, cover, and heat in the microwave on high for 8 minutes
Drain and cover with water

In a separate microwave-safe bowl, combine the linguiça and onion
Cook on high for 2 minutes, stirring halfway through
Add the red pepper flakes, mozzarella cheese, and all-purpose flour and mix well

Drain the spinach leaves, pat dry with paper towels, and cut in half
Remove the central part
Place one and a half tablespoons of linguiça filling on each spinach leaf, fold the sides over, and roll into mini quiches
Arrange on a microwave-safe plate lined with parchment paper, brush with oil, heat in the microwave on high for 2 minutes, and serve.
