In a pot, dissolve the cornstarch in the broth, stirring well to prevent lumps from forming
Add the ginger and cook for seven minutes over low heat or until it slightly thickens

Increase the heat to medium and add the beaten egg, stirring gently to form strands that do not fully dissolve in the broth
Remove from heat, discard the ginger
Add the soy sauce and sprinkle with scallion before serving.
