Mix in a large bowl, 2 cups all-purpose flour
Heat the milk with 1/4 cup granulated sugar, 1/4 cup unsalted butter, and salt until lukewarm
Add yeast and let it rest for a few minutes
Combine milk and flour
Beat eggs and add to mixture, beating at low speed for 30 seconds and scraping down sides of bowl
Then beat at high speed for 3 minutes
Pulse the mixture with enough flour to achieve a smooth, pliable dough
Knead on a lightly floured surface for 8 minutes
Place in a greased bowl, cover, and let rise for 1 hour or until doubled in volume
Divide into 16 equal pieces
Shape each piece into a ball and flatten slightly into a circle, about 7.5 cm in diameter
Place on a baking sheet lined with parchment paper, leaving about 5 cm between each bread
Prepare the topping: Mix together 2/3 cup all-purpose flour, 1/2 cup granulated sugar, and softened butter until a rough mixture forms
Add beaten egg yolks and vanilla extract, mixing well to combine
Pulse in remaining flour (2 tablespoons)
Knead with hands until smooth
Divide into 16 portions
Roll out each portion on a lightly floured surface to form a circle, about 7.5 cm in diameter
Place on top of bread circles on the baking sheet, making cuts to form squares or characters
Cover and let rise for 30 minutes
Bake in a moderate oven (180°C) for 35-40 minutes or until golden brown
Remove from oven, divide into portions, and serve.
