Whisk together the egg yolks, sugar, and salt
Add the scalded milk gradually, whisking constantly
Place over low heat and cook, whisking constantly, until the mixture thickens
Add the wine
Let cool
When chilled, pour over the cake slices and top with Chantilly cream
Serve in 6 portions.
