'2 packages of active dry yeast'
1/2 cup warm water
1 1/2 cups whole milk, lukewarm
3 large egg yolks, beaten
1/3 cup grated candied orange peel
60g softened butter or margarine
1 1/2 teaspoons salt
6 cups all-purpose flour
1/2 cup raisins
1/2 cup chopped candied fruits
1/3 cup chopped almonds

Soak the yeast in warm water
Combine the milk, egg yolks, candied orange peel, butter or margarine, and salt
Mix well
Mix in the flour, adding it gradually and mixing well
Cover with a clean cloth and let rise in a warm oven for 30 minutes
Knead the dough, then add the raisins, chopped candied fruits, and almonds
Mix well
Pour the dough into three greased high-rimmed loaf pans
Bake at moderate heat for 45 minutes
Let cool for 5 minutes before removing from pans
Form 3 panettone
If desired, shape into smaller forms.
