Soak the gelatin in cold water and let it rest for 5 minutes
Whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract
Heat over medium heat until warm, whisking occasionally
Remove from heat, scrape the seeds of the vanilla bean over the mixture, and discard the bean
Add the gelatin and whisk for 1 minute or until dissolved
Add the almond extract and pour into cups or individual serving dishes greased with butter
Chill in the refrigerator overnight, then serve chilled
If desired, serve with chocolate sauce or red fruit.
