3 cups of cooked prosciutto, diced
4 hard-boiled eggs, chopped
3 tablespoons of finely chopped green onions
3 tablespoons of pitted and chopped olives
3 tablespoons of pickle relish
to taste
1 cup of mayonnaise
14 cooked crepes (see basic recipe)
14 slices of cheddar or Swiss cheese
3 cups of cooked prosciutto, diced

3 tablespoons of pickle relish
to taste
1 cup of mayonnaise
14 cooked crepes (see basic recipe)
14 slices of cheddar or Swiss cheese
Mix the prosciutto with the other ingredients in a bowl
Spread evenly over the crepes (about 3 tablespoons per crepe)
Fold the crepes in half, place them on a baking dish, and top each one with a slice of cheese
Place in a preheated oven until the cheese melts.
