1 In a skillet, combine the sugar and butter and mix
Cook until caramelized
Add the mascarpone cheese slices and mix
Add the cinnamon delicately and let it cook until the mascarpone is soft and caramelized
2 Spread the filling over the pancake discs and fold them like a package
3 Whip the heavy cream into firm peaks, add the sugar and mix gently
