Place the butter in a frying pan approximately 25cm in diameter and put it in the oven to melt the butter
Beat the eggs with salt until they become light and foamy
Add the flour and beat well
Add the papaya juice
Pour the mixture into the frying pan
Bake in a hot oven for 12 minutes
Dust the crepe with half of the cheese
Roll it up like a roulade
Mix together the lemon zest, lime juice, and papaya
Wet and pour the roulade
Dust the top with the remaining cheese
Bake in the oven until the cheese melts and starts to brown
Serve hot
