1 egg
1 cup all-purpose flour

1/2 teaspoon vanilla extract

3 ripe mangos
1/2 cup water
3 packets of powdered sugar
2 packets of powdered sugar for dusting

Whisk all ingredients in a blender
Fry the disks in a greased skillet
Set aside
For the filling
Peel the mangos and remove the seeds
Grate the mangoes coarsely and cook them over low heat, in a pan with water
Once well cooked, remove from heat and add powdered sugar; mix well
Place small portions in the center of each pancake, roll up, and place on a platter
Dust with powdered sugar and serve.
