2 cups of quick mix
2 1/3 cups of self-rising flour
1/2 teaspoon of baking soda
2 well-beaten eggs
1/2 cup of yogurt
1 cup of mashed bananas
1 tablespoon of lemon juice
1/2 teaspoon of vanilla extract
1/2 cup of pecans, chopped
2 cups of quick mix
2 1/3 cups of self-rising flour
1/2 teaspoon of baking soda

Preheat the oven to moderate temperature (170°C)
Grease an English muffin tin, 22 x 12 cm
In a bowl, mix together the quick mix, flour and baking soda
Mix well
In another small bowl, mix well the eggs with yogurt, mashed banana, lemon juice and vanilla extract
Combine the banana mixture with the dry ingredients
Beat the mass and add the pecans
Pour into the prepared tin
Bake in the oven for 1 hour or until a toothpick inserted in the center comes out clean
Let it rest for 5 to 10 minutes and then demold
Serve cold.
