Masa
1 tablet of biological yeast (15g)
1 tablespoon of sugar
1/2 cup of warm milk
3 tablespoons of milk
1 pinch of salt
1 egg
100g of butter
1/2 cup of cream
3 cups of wheat flour
1 beaten egg for brushing
Filling
3 egg yolks
1/4 cup of sugar and confetti
1/4 cup of cornstarch
2 cups of hot milk
250g of dried fruits (coconut, kiwi, mango, red fruits)

Masa
Mix the yeast and sugar until totally dissolved
Mix the warm milk, milk, salt, egg, butter, and cream
Gradually add the wheat flour
Work the dough until it detaches from your hands
If necessary, add a little more flour
Cover with a cloth and let it rest until it doubles in volume
Filling
In a saucepan, combine the egg yolks, sugar, and confetti
Mix well and add the hot milk
Bring to a boil and stir constantly until thickened
Assembly
Divide the dough into two parts and shape each one into a rectangle
Distribute the cream and fruits over each rectangle
Roll up like a rocambole, brush with an egg, and place in a lightly greased baking dish
Cover and let it rest for 10 minutes
Bake in a preheated oven at 180°C for about 40 minutes
Decorate to taste.
