Combine the ingredients in a bowl and mix everything for 10 minutes with a stand mixer
Dissolve the yeast in warm water until it's liquid, then pour it into the mixed dough
Let it rest for another 3 minutes in the mixer
Open the dough and add the poppy seeds
Shape the dough into a square and mix by hand until the poppy seeds are evenly distributed
Separate into 120g portions and let them rest for 5 minutes
Take three pieces (each with 120g) and roll them into strips, then join them at one end to form a braid
Shape the dough into a train shape
Fill half an American cup with water and wet the dough
Then sprinkle poppy seeds to taste
Let it rest for another 10 minutes before baking in a preheated high-temperature oven for 30 minutes at medium heat
