2 fresh yeast tablets for bread

In a bowl, mix the warm water with yeast
Aquece the milk with sugar, butter, and salt until it's lukewarm
Mix thoroughly without stopping until the butter is almost melted
Add yeast and egg
Add 1 1/4 cups of all-purpose flour
Beat at low speed for 1/2 minute, scraping the sides of the bowl with a spatula
Beat at high speed for an additional 3 minutes
Add the remaining flour and knead by hand until you get a soft dough
Form into a ball
Place in a lightly greased bowl and rotate once to coat the entire surface
Cover and let rest in a protected place until it doubles in volume, for about 1 hour or more
Lower the center of the dough with your fist and place on a floured surface
Cover and let rest for an additional 10 minutes
Shape into small round loaves, cover and let rest in a protected place until it doubles in volume, for about 30 to 45 minutes
Baste with 2 egg yolks
Place on greased baking sheets
Bake in moderate heat (170°C) for about 10 to 12 minutes or until golden brown
Let cool
These small loaves can be frozen
Wrap in aluminum foil and freeze
Maximum freezer time: 2 months
To reheat and serve, bake at high heat (220°C) wrapped in aluminum foil for about 15 minutes
Serves 6 to 8 people.
