1 packet of active dry yeast

1/2 cup of mashed cooked sweet potato
60g of butter or margarine

1 1/2 teaspoons of salt
1 cup of hot milk

4 to 5 cups of all-purpose flour

Soak the yeast in warm water
Mix together the sweet potatoes, butter or margarine, sugar, salt, and hot milk
Let it cool slightly
Add the soaked yeast and egg
Mix well
Add 2 cups of flour and mix until a smooth dough forms
Gradually add the remaining flour until a pliable dough is achieved
Place on a floured surface and knead for about 5 minutes
Shape into a ball and place in a greased bowl
Flop the dough gently to coat with butter or margarine
Cover and let rise in a protected area for 1 hour
Flatten the dough (use a closed fist as if punching) to release air bubbles
Cover and let rest for 10 minutes
Shape into desired forms (refer to page 84)
Place in greased baking dish and let rise for another hour
Bake in a hot oven for about 10 minutes.
