Heat the milk over low heat until it's scalding hot
Let it cool down
Dissolve the yeast in warm water and add to the milk
Add 3 cups of flour and beat well for about 5 minutes
Cover the bowl, place it in a protected area, and let it rise until bubbles form
Add the beaten egg, melted butter or margarine, salt, sugar, and enough remaining flour (not too sticky) to form a dough
Knead the dough again for about 5 minutes
Grease a baking tray
Shape small balls of dough, place them on the tray, and gently press down with your hand
Let it rest again until it doubles in volume
Preheat the oven to hot (200°C), put the puffs in the oven, and bake for 20-25 minutes or until lightly golden
The tiny puffs are served warm, cut in half horizontally, and brushed with melted butter
You should have about 30 puffs.
