2 packets of active dry yeast
1/3 cup of warm water
1/2 cup of sugar
125g of butter or margarine
2 tablespoons (level) of salt
2/3 cup of milk
5 to 5 1/2 cups all-purpose flour (approximately)
3 slightly beaten eggs

3 slightly beaten eggs
Soften the yeast in warm water
Mix the sugar, butter or margarine, salt, and milk; place over low heat and stir until the butter or margarine has melted and the mixture is almost boiling
Let it cool a bit
Add 1 1/2 cups of all-purpose flour; beat well
Add the softened yeast and eggs; beat well
Add enough remaining flour to obtain a manageable dough
Place on a floured surface and knead for about 5 minutes
Transfer to a lightly oiled bowl
Cover and let rise in a protected area for 1 1/2 hours
Punch down the dough (as if you were giving it a punch)
Shape into puffs (see our designs)
Place in a greased baking dish, let rise for 50 minutes, and bake at moderate heat for 15 minutes
If desired, brush with egg mixture mixed with a little milk before baking.
