Place a wire rack at the bottom of a pan to prevent the coffee from rising and spilling
Mix the sugar and coffee together and bring it to a medium heat to achieve the right consistency
Beat the egg yolks well and add them slowly to the hot coffee, beating constantly until it cools down
Beat the whites in snow
Add the yolks to the mixture and stir carefully
Refrigerate
Whip the fresh whipped cream or chilled whipped topping and add it carefully to the coffee mixture
When serving, place in cups and sprinkle with grated chocolate or chocolate shavings
