One large cucumber, peeled and seeded, finely chopped

Place a cheesecloth over a colander, on top of a bowl
Pour the yogurt and let it drain for 1 hour and 30 minutes
Transfer the drained yogurt to a bowl, add the cucumber, olive oil, garlic, and dill
Season with salt
Cover and refrigerate
(Can be prepared 6 hours in advance)
Serve with French bread slices
Dose: 1 1/2 cups
