Mix the flour, butter, ricotta, and 1 pinch of salt
Knead well until it becomes a uniform dough
Let it rest for about 1 hour
Roll out the dough with a pasta machine and cut large rings with a big cookie scoop
Place a small amount of filling made with marmalade cubes in the center of each one
Fold over the free part of the dough to enclose the filling, and press the edges
Arrange the fritters on a buttered and floured baking sheet, brush with an egg yolk mixed with softened butter, and bake in a medium oven.
