2 cups all-purpose flour (300 g)
3/4 cup cold unsalted butter, cut into small pieces (180 g)

Place the flour in a large bowl and add the butter
Mix with two forks until well combined
In a separate bowl, beat the egg yolk and water
Add to the flour mixture and mix until a ball forms
Divide the dough into two parts and roll out on a floured surface to a thickness of about 1/8 inch
Cut into circles of about 6.7 inches in diameter
Fill each circle with about 3 tablespoons of the filling
Fold in half and press edges together with a fork
Place on an ungreased baking sheet, brush with egg white, and bake at 400°F for about 20 minutes, or until golden brown
