Sift the wheat flour into a bowl and make a depression in the middle
Place all the other ingredients (except the brine) and knead
Add the brine gradually, then knead with your hands until you get a smooth and uniform dough
Pound the dough well by tearing it apart with your hands
Join the pieces, knead, and beat on the table to obtain a very soft dough that comes off your hands
Make a ball and let it rest for at least 1 hour
Cover the dough with cloth
Roll out the dough with a rolling pin (or pasta machine) over a floured surface
Place cheese cubes and press the edges tightly
Cut the tarts and fry them in hot fat
Place the tarts on absorbent paper to remove excess fat.
