In a saucepan, combine the sugar and water and bring to a boil, stirring only until the sugar dissolves
Pare down and let it simmer until you reach the consistency of a soft ball
In a bowl with water, add a little bit of this syrup, testing with your finger to verify if it forms a soft ball that doesn't dissolve in water
Add the passion fruit juice and let it simmer for another 4 minutes
Remove from heat and, using a spoon, begin beating like you're beating eggs
When it's beating well, spread it on a lightly buttered or moistened surface
Immediately after spreading, cut into small squares with a knife, let it cool, and roll in paper to form a ball.
