1/2 pound lean pork ground
3/4 pound lean beef ground
1 large onion, finely chopped (170g)

Preheat the oven to moderate temperature (180°F)
In a large bowl, mix all ingredients except for the bacon
Mix well, preferably with your hands
Remove a little from the mixture and fry
Taste to check the seasoning
Place the bacon slices side by side in a baking dish
Shape the pork into an oval shape and place it on top of the bacon
Raise the edges of the bacon slices and place them over the pork
Turn the pork so that the edges of the bacon are underneath
Put it in the oven and bake until golden brown and firm, for about 1 hour and 30 minutes
Moisten frequently with the fat that forms in the baking dish
Let it cool completely before cutting
