1 rabbit, cut into 8 pieces

4 tablespoons of mustard
1/2 cup of bread crumbs
1/2 cup of wheat flour
Lard or oil for frying

Remove excess fat from the rabbit pieces, wash and pat dry
Season with salt and black pepper
In a small bowl, mix together the green onion, egg yolks, and mustard
On a plate, combine the bread crumbs and wheat flour
Coat all sides of the rabbit pieces with the mustard mixture
Then coat in the breadcrumb mixture, pressing gently to adhere
Let it rest on a wire rack for about 30 minutes, if possible, to allow the coating to stick well (make sure they are well covered)
Fry the rabbit pieces in hot oil for about 5 minutes, turning once until golden brown
Arrange in a baking dish, in a single layer, and bake in a moderate oven (150°C) for about 45-60 minutes or until tender
Note: We used 1 1/3 cups of oil to fry
After frying, only 3/4 cup remained.
