1 quart of 2 liter ice cream
400 g of frozen strawberries
2 tablespoons (heaping) of sugar
250 g of champagne biscuits
Raspberry coulis for serving to taste

Let the ice cream sit out at room temperature for a few minutes to soften slightly
Then whip it in a mixer, on high speed, until it's light and airy
Chill it in the refrigerator
In a saucepan combine the strawberries and sugar
Cook until a syrup forms
Allow it to cool
In a parfait dish layer the following: a moistened biscuit, a layer of fruit, and a layer of whipped cream
Repeat this process until all ingredients are used up
Chill in the freezer for at least 12 hours
To serve, remove from freezer 20 minutes before and keep chilled.
