This is the authentic Maranhense Water Fudge, not like the one made in São Paulo with Karo
It's water fudge with flour, without peanuts
One uses cornstarch that has no excessive carotenoids
Cornstarch is different from regular flour, it's a type of starchy substance, not equal to dry flour
So, I despise carotenoids
Afterwards, I put the flour under running water, like washing rice
A layer forms
I remove this layer and drain
I do this again, draining twice
Then, I take 250g of this cornstarch and let it dry until it's nice and dry
Dry means with little water, just enough to swell
Afterwards, I grate a coconut, add it to the flour
I mix in one tablespoon of butter and to taste, and mix everything together
If it becomes too hard, I add coconut milk to bind it
I also add some cinnamon
I take it, shape it into croquettes, fry them in hot oil, and put them on paper towels to drain
After that, I dust them with sugar and cinnamon
I make about 30 water fudges.
