2 boneless chicken breasts, cut in half

In a small bowl, mix well the olive oil, salt, black pepper, garlic, and ginger
Place the chicken breasts in the bowl and turn them to coat evenly with the marinade
Close the ends of the breast by pressing it underneath for a neat and compact shape
Place the chicken in a shallow baking dish with the skin side up
If there is some liquid, pour it over the chicken
Put it in the hot oven (400°F) and bake moistening occasionally with the liquid from the dish for about 20 minutes or until cooked through
Transfer to a platter
Pour any remaining sauce over the top and garnish with lemon and parsley to taste
