Remove the skin and bones from the chicken and cut each breast in half
Dredge the meat in seasoned flour with salt and pepper
Heat a non-stick skillet with olive oil and butter over low heat for 5 minutes or until lightly browned
Continue cooking the chicken for another 5 minutes, add the wine and broth
Let it simmer, covered, for 5 minutes
Remove the chicken from the pan and let the sauce reduce to one-third of its initial amount
Add thyme and serve immediately
