Remove the skin and excess fat from the pork chop and season with garlic and salt. Reserve
Heat the oil in a skillet and fry the pork chops for 4 minutes on each side or until they're tender. Reserve
Preheat the oven to high temperature
Peel and slice the mango
Arrange the slices in a baking dish and sprinkle with butter
Place in the oven until golden
Serve the pork chop with the roasted mango
Garnish with cherry tomatoes and crispy sauce.
