1 turkey of approximately 5 to 6 kg
For the marinade
2 large onions
4 cloves of garlic
2 cups of vinegar
1 cup of water
2 sprigs of rosemary
1/3 cup of olive oil
salt and pepper to taste

Wash the turkey well
Season with salt and black pepper to taste
Blend the marinade ingredients in a blender
Place the turkey in a roasting pan, make several holes, and baste with the marinade
Leave it to marinate for one day to another in the refrigerator
Put the turkey in a preheated moderate oven (180°) and roast until tender
Remove from the oven and let cool
Remove the wings, thighs, and backbones, leaving the breast intact
Place the breast on a platter and cut some slices
Serve with condiments
Note: use the dark meat of the turkey in a stew, risotto, or other dish of your preference
Serves 10 to 15 people
Observation: if the turkey has already been seasoned, use the marinade but do not add salt and pepper.
