4 tablespoons of olive oil
1 fish weighing around 2 kg (such as sea bass, mullet, or snapper)
salt and black pepper to taste
3 medium-sized green peppers, seeded and chopped into thin strips
1 cup of black olives
3/4 cup of finely chopped onion
1 garlic clove, minced
2 cups of crushed tomatoes
1 tablespoon of oregano
250g of fresh Minas cheese, crumbled

Preheat the oven to 250°C (475°F)
Remove the fish bones from along the sides of the fish
Grease a baking dish with 1 tablespoon of olive oil
Place the fish in the baking dish
Sprinkle salt and black pepper inside and out
Heat the remaining olive oil in a pan over high heat, then add the green peppers, onion, olives, and garlic until they're tender
Add the crushed tomatoes and oregano; cook for 5 minutes, stirring occasionally
Place half of the sauce and cheese mixture inside the fish and the rest on top
Sprinkle with cheese and bake in a preheated oven at 200°C (400°F) for 45 minutes or until the fish is cooked through
Let it rest for 10 minutes before serving.
