1 fish of about 3 kg (snapper, sea bass, tilapia, or flounder)
salt and black pepper to taste
2 medium onions, chopped
1/2 cup butter
4 cups breadcrumbs
1/2 cup water
2 eggs, beaten
2 tablespoons chopped green onion
2 tablespoons chopped parsley
4 slices of bacon, cut in half

When buying the fish, scale it so that you can open it up and clean it out
Rub with salt and pepper inside and out
Fry the onion in butter or margarine until softened
Soak the potato in water
Add the eggs
Combine with the fried onion and cook for about 5 minutes over low heat, stirring frequently
Remove from heat and add green onion and parsley
Stuff the fish and close with toothpicks to prevent filling from escaping
Place in a baking dish coated with butter and top with bacon slices
Bake in a moderate oven (170°C) for about 40 minutes, or until the fish is cooked through
Serve hot.
