2 cups of cooked fish without bones (you can use leftovers)

Break the fish into pieces
Melt the butter and add the flour, stirring well
Stir well
Add the milk, salt, and pepper to the mixture, stirring constantly until it's smooth and thick
Add this hot sauce to the beaten eggs
Add the white wine and fish
Beat the whites in stiff peaks
Add to the fish mixture
Grease a 1 1/2 liter Pyrex dish with butter and sprinkle with pancake flour
Pour the fish mixture into the dish
Bake in a moderate oven for 45 minutes
Let it rest for 4 portions.
