2 sticks of penne
One half cup of chopped onion
1 cup (soup) of extra virgin olive oil
2 tomatoes, peeled and seeded into strips
Salt to taste
1 can of light tuna
1 cup (soup) of green pimiento
Mint leaves

Cook the pasta al dente and set aside
In a non-stick skillet, sauté the onion with olive oil
Add the tomato and salt and cook for another two minutes
Add the tuna, green pimiento and pasta
Stir delicately
Turn off the heat and place on the plate
Garnish with mint leaves and serve immediately.
