250g of mozzarella cheese cut into 8 slices
12 leaves of parsley
8 slices of bread
2 large firm tomatoes
Salt and black pepper to taste

Cut the tomatoes into 12 wedges and reserve
Spread butter on one side of the bread slices
Place four of them on a surface with the buttered side down, topped with a piece of cheese and three tomato wedges stacked
Sprinkle salt and black pepper
Add three sprigs of parsley
Top with another slice of cheese and finish with a second slice of bread
Heat a large skillet over high heat and cook two sandwiches at a time
Fry for 3 minutes on each side, pressing gently with a spatula, and serve.
