To make the filling, melt 125g of butter and cook the onion slowly for 15-20 minutes
Add the mushrooms
Cook quickly, stirring constantly over high heat
Season with salt, pepper, and thyme
Add half the wine and tomato
Let it simmer on high heat until the liquid reduces
Remove from heat, add biscuit flour, reserving one tablespoon for later, and beaten egg
Mix well and check seasoning
Stuff the fish with this mixture and place in a well-greased baking dish
Season with salt and pepper, add the remaining wine, and sprinkle with reserved biscuit flour
Cover with the remaining butter in small pieces
Bake in a moderate oven for approximately 40 minutes, basting frequently
