Preheat the oven to 250°C (very hot)
Season the fish with lime juice and salt
Place half of the spinach in a baking dish and arrange the fish on top
Spread the remaining spinach and ginger over the fish and brush with coconut milk
Cover with aluminum foil and bake for 10-15 minutes or until the fish is cooked through
Serve immediately
