Wash the zucchinis, peel and cut them in half lengthwise
Remove the seeds with a small spoon
Slice the zucchini into thin strips
Peel the onion and cut it into small cubes
Melt the butter and sauté the onion
Add the zucchini and let it roast for a few minutes
Season with salt and pepper
Add a little water, cover, and let it cook slowly for 15 to 20 minutes
Sprinkle with chopped parsley
Serve in 4 portions.
