Peel the pears, leaving the stems intact
Using a small knife, carefully cut around the core to remove the seeds from the bottom of each pear
Place the pears in a baking dish
Mix together the orange juice, wine, lemon zest, and sugar
Pour the mixture over the pears, cover, and bake in a high-temperature oven for 24 minutes
Baste the pears several times with the liquid that collects at the bottom
Remove from the oven, sprinkle with gelatin, and mix
Let cool and refrigerate until chilled, then freeze
If desired, add a few drops of red food coloring to the liquid
Serve with whipped cream or ice cream
