Remove the stems from the strawberries, without peeling or removing seeds
Cut the strawberries into small pieces and place them in a pot with the water
Cover and let it boil at high heat
Reduce the heat and cook for 20 minutes or until the strawberries are very soft
Strain this mixture through a fine cheesecloth to extract the liquid (discard the strawberry pulp)
In another pot, combine the strained liquid, sugar, and lemon juice
Bring to a boil until it reaches the gelatin point
Remove any foam and pour into sterilized jars
