2 egg whites

Mix the sugar and water and bring to a boil
Let it simmer for about 8 minutes
Let it cool down
Mix with passion fruit juice and orange juice
Place in a flat container and refrigerate
Stir several times until it becomes semi-firm
Add beaten egg whites and stir well
Place in 4 individual molds and refrigerate again to set
Garnish with grated orange zest.
