Beat the egg yolks with 2 tablespoons of sugar until thick and pale yellow
Beat the egg whites with the water and salt until stiff: fold in the egg yolks and mix carefully
In a 25cm-diameter skillet, melt enough butter to coat the bottom and sides
Add the eggs
Reduce heat and cook until the omelette is golden brown on the bottom and well risen on top
Spread sliced strawberries over half of the omelette
Fold the other half over and slide onto a plate
Dust with confectioner's sugar
Place a metal skewer under the broiler to make a quadrangular design; garnish with reserved strawberries
Serve 1 person.
