Whip the cream to chantilly-like consistency
Add the honey and lime zest
Peel the pears, cut into pieces, add the quince liqueur, and mix with the cream
Beat until a creamy consistency is achieved
Serve over poached pears or other fruits
Garnish with chocolate shavings
