1/2 bottle of red wine

2 ripe cherries, pitted with stem

100g of dark chocolate
30g of ground pistachio

Combine the wine and sugar to a boil and add the cherries to cook
When cooked, remove the cherries from the syrup and drain
Allow the syrup to reduce until it has the consistency of honey
When the cherries cool, cut a 'lid' at the stem end, then with a small sharp knife, remove the pits. Reserve
Place heavy cream in a pan and once boiling, remove from heat and stir in the chopped chocolate
Allow the mixture to cool, then fill the cherries, allowing a little to spill over
Replace the 'lids' on the cherries and place them on a plate with a small amount of cooking syrup
Dust the cherries with ground pistachio and serve.
