Pork Ribs
1 kg of pork ribs cut into small cubes
1 1/2 teaspoons of salt or to taste
Black pepper to taste
2 tablespoons of lemon juice
2 tablespoons of olive oil
1 cup of water
1 large onion, chopped
2 cloves of garlic, minced
2 large tomatoes, seeded and chopped
4 cups of ora-pro-nobis leaves
2 tablespoons of parsley, chopped
Polenta
1 1/2 cups of white cornmeal
7 cups of cold water
1 teaspoon of salt or to taste
1 tablespoon of butter

Pork Ribs
Season the meat with salt, black pepper, and lemon juice
Let it sit for two hours to develop flavor
In a large skillet, heat some olive oil over medium-high heat
Add the pork ribs and water
Cook, stirring occasionally, until the water has evaporated and the pork is nicely browned
Remove the pork from the skillet and set aside
Add the chopped onion and garlic to the skillet (if needed, add a little more olive oil)
Cook for two minutes, stirring constantly
Add the tomatoes, salt, and cook quickly
Finally, add the ora-pro-nobis leaves and parsley, stir well, wait until the leaves have wilted, and turn off the heat
Polenta
In a large saucepan, combine the cornmeal, cold water, and salt
Bring to a boil over medium-high heat, stirring constantly
Reduce the heat to low, cover, and cook for 40 minutes
Taste and adjust seasoning if needed
Add butter, stir well, and serve hot
Assembly
Place some polenta on a plate, top with a bit of the braised pork rib mixture, and garnish with ora-pro-nobis leaves
Optional: Use the ora-pro-nobis leaves as wraps for cheese or kani with olive oil and salt, and secure with toothpicks
You can also use them to make white sauce like spinach, serve with lasagna or pancake.
