Roast the pork loin in the oven as usual
Prepare a green sauce by mixing together mayonnaise, spinach puree, chopped chives, and chopped parsley
Taste and adjust with salt and pepper if needed (the mayonnaise is already seasoned)
Slice the cold pork loin into thick pieces and serve with the green sauce.
