For the turkey and herbs,
1 turkey (6-7 kg),
3 cloves of garlic, minced
1 tablespoon of black pepper
1/2 teaspoon of salt
1 whole allspice berry
1/2 cup of chopped parsley
1/2 cup of chopped onion
1 carrot, grated
2 cups of white wine
1 cup of vinegar
For the stuffing
1/4 cup of crumbled bacon
1/2 cup of sautéed onion and herbs
1/4 cup of chopped fresh parsley
1/2 cup of diced tomatoes
Cooked rice
1 cup of turkey broth
6 cups of cooked peas, drained and 3/4 cup of milk

Prepare the turkey and herbs: remove the giblets from the turkey and reserve them
Rub the inside of the turkey with salt and rinse with cold water one or two times
Dry the cavity
Leave the turkey to marinate for a day in the herb mixture, which is made with all the ingredients
Turn the turkey occasionally, but the breast should remain in the marinade for a longer time
The next day, cut the neck open and wash with cold water to remove any bones
Wash the remaining giblets and, in a pot, cover them with 4 cups of water, 1/2 teaspoon of salt, herbs, and peas
Cook over low heat
Remove from the broth and reserve it
Chop the giblets
Prepare the stuffing: fry the bacon in a pan
Drain the grease
Add the onion, herbs, and tomatoes
When everything is golden brown, cover with the reserved broth and let it simmer
Strain through a sieve, combine the giblets and peas
Mix well with a fork
Season to taste
Let it cool and stuff the turkey, sewing the opening
Brush very well with melted butter and glaze with a little of the herb mixture cooked down and the juices that form in the roasting pan
This turkey takes 3-5 hours to roast.
